Capsaicin — the burn molecule — is fat-soluble, so water just spreads it around. Milk's casein protein grabs the capsaicin and carries it off. Order milk with the spicy food rather than after it, sip rather than gulp, and know that rice or bread helps too. Beer, sadly, makes it worse.
